Bachi
Bachi is the Billy Smoker rendition of the classic Japanese hibachi grill. Whilst spending time abroad in Japan we fell in love with this compact method of charcoal cooking. We have taken the traditional design and thrown a bit of Billy flavour into it. We increased the size to handle solid wood, it can accomodate our grill and grilling swords. Bachi includes a grate in the bottom to assist with airflow when charcoal cooking. The rails allow swords to be held secure and for the grill to slide along in and out of the heat source. Bachi is best served in aged mild steel but can be produced in stainless steel for those who are scared of rust.

Use, maintenance and care
Billy Smoker units are built to last with the right care.
Mild Steel units: Painted metallic black (industry standard finish). For outdoor or exposed installations, a covered area is recommended. Re-season the firebox periodically by lighting a small fire to burn off surface moisture.
Stainless Steel units: Handles both covered and uncovered environments with minimal corrosion. Wipe down with a damp cloth after use. Avoid abrasive cleaners.
General: Remove ash regularly to maintain airflow and cooking performance. Check flue and spigot connections periodically. Keep the unit dry when not in use.
